IHeartFaces~Smile:)

This week at http://www.iheartfaces.com/ the photo callenge is "Smiles", and even though this photo isn't edited very well, and it is not taken by a professional photographer, I absolutely adore this photo!
This is my dad at his retirement ceremony from the Air Force a few weeks ago! These are his two "nursing girls"! We could not be more proud of him! He was so genuinely happy in this picture, and I laugh when I see it, b/c his expression is Priceless!! Congratulations on 29 years in the Air Force Colonel; we Love you!

I Heart Collages Photo Entry

Photos taken in December of 2008 on a trip to Japan to visit my sister, who is stationd there as a nurse in the Air Force!
~First picture is of the Tokyo Tower
~Second picture is just a cute/funny picture of two Japanese gentlemen who had fallen asleep on the train ride home from work! You can't tell very closely, but the man on the left has his cell phone in his hand, and it is still open, as though he fell asleep while using it
~Third picture is another one of my favorites of one of the main modes of transportation in Japan: Bicycles!

Shopping in Manitou

Today, my Aunts, Mom, sister, sister's friends Katy and Carrie, and Doug and I went to Manitou Springs to go shopping! The first store that we went into was called Ellie Blue. I saw these adorable little buttons, and decided that everyone in the group should pick one out that describes them/or their personality and that we should all wear them during the day!
Doug was the Stud Muffin today since he was the only guy with us!
I was the Cupcake!

~Dessert Recipe Edition at IHeartFaces: Simple S'More Cups

Simple S'More Cups
Prep time: 30 min
Makes: 24 cups
The dessert I chose to make comes out of the Pampered Chef Simply Sweet 56 Irresistable Dessert Book 2010! After flipping through this recipe book and deciding on what to make, I decided on Simple S'More Cups!

The ingrediants you'll need are :7 whole graham crackers (1 cup finely crushed)
1/4 cup powdered sugar
6 tbsp butter, melted
4 bars (1.55 oz each) milk chocolate candy, divided
12 large marshmallows
(2)12 holed mini muffin/ tart pans
Let the cooking begin!
1. Preheat oven to 350 degrees F
2. Place graham crackers into a large resealable plastic bag. Finely crush into crumbs. (I just used prebought graham cracker crumbs), which saved a little bit of time!
3. Combine graham cracker crumbs, powdered sugar and butter in a small batter bowel.


And mix...

4. Using a small scoop (or spoon), place a scant scoop of crumb mixture in each cub of a mini muffin/tart pan.

5. Press crumbs to form shallow cups with a mini-tart shaper (this is actually quite handy to have), but you can improvise and use something else you already have in your kitchen (maybe even your thumbs!):)

6. Bake graham cracker crusts for 4-5 minutes or until edges are bubbling.

7. Meanwhile, break two of the candy bars into rectangles. (I got ginormous Hershey bars, so I had to improvise and break a piece off each of my rectangles so they fit into the cups!) Oops...:)

8. Remove pan from oven and place one rectangle into each cup.

9. Cut Marshmallows in half crosswise using a knive or scissors dipped in cold water. Place one marshmallow half, cut-side down, into each cup.
10. Return pan to oven for 1-2 minutes or until marshmallows are just slightly softened. Remove pan from oven to cooling rack and let cool for 15 minutes BEFORE removing cups from pan. Cool Completely!! Ooops...had slight problem here...

11. Break remaining candy bars and place in a bowl. Microwave on high for 1-1 1/2 minutes until melted and smooth, stirring every 20 seconds.
12. Dip the top of each marshmallow in melted chocolate.

13. Turn top-side up and let stand for 40 minutes to an hour, or until set.


Now, I wasn't going to share nutrient values, but I also realize we probably are mostly women and are curious to know, so....
Serving size: 1 cup: Calories: 100, Total Fat: 6g, Saturated Fat: 3.5 g, Cholesterol: 10mg, Carbs: 11g, Protein: 1g, Sodium: 60 mg, and Fiber: 0g
I hope that you all will test the Simple S'More Cups out! I brought these to work and they were a huge hit! They are delicious, and a fun winter treat to make! And you don't have to have a fireplace or outdoor fire to roast your marshmallows!
